Hi friends, I know this was a few months ago now, but let's go with it. This Halloween, a few friends and I got together to carve some jack o'lanterns. Since we had four pumpkins, and a plethora of pumpkin seeds, I decided to roast some seeds while we worked on our masterpieces. A quick call to my mom and I got the simple recipe she used when my family used to carve pumpkins.
"Hi Shauna,
Oven 300 degrees.
2 T butter
2 cups washed pumpkin seeds
1 1/4 teaspoon salt
1/2 teaspoon each: cumin, chili powder, pepper
Melt butter in large saucepan, or bowl in the micro.
Add ingredients; toss to coat.
Spread on cookie sheet, bake 30-40 min (stir often till brown and crisp)
